“Polvorones” are a delicious typical cookie from Puerto Rico that has a touch of almond and butter with a soft and crunchy texture, that will be enjoyed by adults and children. Follow my instructions and you will see how everyone enjoys the product of this recipe.
Ingredients:
1 bar of butter
1/2 tsp vegetable shortening
1/2 tsp granulated sugar
2 tsp all-purpose flour
1 tsp almond extract
Sprinkles, guava paste or any “topping” of preference.
1 pinch of salt
Procedure:
In a medium bowl, using a hand mixer, beat the butter, shortening and sugar until well combined and smooth. Add the almond extract and beat on low speed. Add a pinch of salt to the all-purpose flour and pour it into our butter and shortening mixture. With a spatula, mix until everything is well combined. Using gloves or our clean hands, we mix until we form a dough that does not stick to our hands. We will form small balls and place them on a tray prepared with baking paper. We will place them 2″ away from each other to prevent them from sticking when baked. Once all the balls are ready, with the tip of our fingers or the back of a measuring spoon (1/8 measure) we make an “indentation” in the center of each shortbread and there we will place the sprinkles, the guava paste or the “topping” that you prefer.
Bake at 350 degrees for 15 to 20 minutes (remember that every oven is different) or until golden brown all around.
